Chicken Nuggets

  1. Place chicken, onion, egg and stale breadcrumbs in a food processor and process until combined. Shape level tablespoon of mixture into patties.
  2. Mix dried breadcrumbs and seasoned salt on a large plate. Roll chicken nuggets in mixture to coat well.
  3. Pour oil to a depth of 2 inches in a large saucepan. Heat on medium-high heat (oil is ready when a cube of bread crisps quickly without absorbing oil). Cook nuggets, in batches, until tender and browned. Remove with a slotted spoon and drain on paper towels.
  4. Mix tomato sauce, barbecue sauce, sugar and vinegar in a bowl. Serve warm nuggets with sauce, green salad and potato wedges, if desired.
