Red Tomato Salsa
- 2 tomatoes, diced
- 1 green bell pepper, diced
- 1 medium onion, diced
- 2 to 3 cloves garlic, minced
- 2 to 3 jalapeno peppers
- 2 Tbsp. minced cilantro
- 1 tsp. lime juice
- 1 tsp. ground cumin
- 1 tsp. dried oregano
- 1/4 tsp. black pepper
- 1/4 tsp. salt
- 1/4 ground cayenne pepper
- 2 c. canned crushed tomatoes
- Combine all ingredients except crushed tomatoes in a large bowl; mix well.
- Place about 3/4 mixture in a food processor, fitted with steel blade, and process for about 5 seconds.
- Return to bowl with remaining salsa mixture.
- Add crushed tomatoes and mix well.
- Cover tightly and allow to chill at least 1 hour before serving.
- Makes about 4 cups.
