Fish Fillets
- 2 lb. frozen cod or halibut fillets
- 1 c. chicken broth
- 1/4 c. olive oil
- 1/4 c. lemon juice
- 1 bay leaf
- 1 clove garlic, minced
- 1 Tbsp. grated onion
- 1/2 tsp. salt
- 1/4 tsp. thyme
- 4 to 6 onion slices
- 4 to 6 tomato slices
- 1/4 c. corn flakes, crumbled
- 2 Tbsp. grated parmesan cheese
- 3 Tbsp. butter
- Cut fish into 4 to 6 portions, and put into shallow buttered casserole dish. Mix the next 6 ingredients and pour over fish. Let stand until fish is thawed. When ready to bake, top each piece of fish with 1 onion slice and 1 tomato slice. Sprinkle over top, a mixture of corn flake crumbs and parmesan cheese. Dot with butter. Bake at 350 degrees for 25 to 30 minutes, or until top is a golden brown. Serve with sauce from pan.
