Nachos And Fresh Guacamole

  1. Place the chopped avocado, garlic and lemon juice in a blender and puree. Season with salt and black pepper. Fold in the diced avocado.
  2. Preheat the broiler. Line a baking tray with parchment paper and spread the tortilla chips on top. Spoon the guacamole onto the chips and sprinkle with the chili rings and cheese. Grill for 2-3 mins, until the cheese is melted.
  3. Transfer to a platter and garnish with the whole chilies, red cabbage, bean sprouts and lime slices.
