Easter Bunny Cupcakes

  1. Preheat the oven to 325u0b0F. Line an 8 cup muffin pan with paper liners. Cream the butter, sugar, salt and vanilla extract with an electric hand mixer. Add the eggs, beating well between each addition. Stir in the chocolate. Fold in the flour and baking powder. Divide the cake batter evenly and bake for 20-25 mins. Remove and cool on a wire rack.
  2. Meanwhile, knead together the marzipan and powdered sugar. Use 3/4 of the marzipan to make 8 bunny rabbit shapes. Reserve the remaining 1/4 marzipan. Use the black decorating icing to pipe details onto the bunnies. Decorate with the sugar flower decorations.
  3. To finish, dust the cupcakes with the powdered sugar. Knead the green coloring through the remaining marzipan then press through a garlic press onto the cupcakes to create "grass". Place a bunny on top of each cupcake.
