Pork Meatloaves With Mashed Potatoes
- 1 lb ground pork
- 1/3 cup dried breadcrumbs
- 4 None spring onions, thinly sliced
- 1 oz aged Cheddar cheese, finely grated
- 1/2 cup tomato salsa
- 1 1/2 lb potatoes, peeled, chopped
- 2 tbsp butter
- 2 cloves garlic, thinly sliced
- 1/2 cup milk
- None None fresh thyme leaves, to garnish
- None None green beans, steamed, to serve
- Preheat oven to 350u0b0F. Lightly grease an 8-cup muffin pan.
- In a bowl, combine ground pork, breadcrumbs, 2 spring onions and cheese. Season. Press into muffin pan. Spoon salsa over top. Bake for 15-20 mins, until cooked through and golden. Let rest in pan for 2 mins.
- Meanwhile, cook potatoes in boiling salted water for 12-15 mins, until tender. Drain and set aside.
- Add butter to pan. Saute remaining onions and garlic over high heat for 1-2 mins. Return potatoes to pan along with milk. Mash. Season and cook for 1-2 mins over low heat to warm through.
- Remove meatloaves from pan, retaining juices to drizzle, if desired. Sprinkle with thyme. Serve with mashed potatoes and green beans.
