Ricotta Puffs With Orange Syrup
- 2/3 cup clear honey
- 1 tsp orange extract
- 10.5 oz fresh ricotta cheese
- 1/3 cup self-rising flour
- 1/4 cup granulated sugar
- 2 None large eggs, lightly beaten
- 1/2 tsp vanilla extract
- None None vegetable oil, to deep-fry
- 1 tbsp pistachios, chopped
- None None orange zest, to garnish
- None None shredded orange zest, to garnish
- Combine 1/4 cup water and honey in a small saucepan. Bring to a boil then reduce heat and simmer for 2 mins, or until syrupy. Let cool then stir in orange extract.
- Combine ricotta, flour, sugar, eggs and vanilla extract in a medium bowl.
- Heat oil, 4 inches deep, in a large saucepan to 350u0b0F. Working in batches, fry heaped tablespoons of ricotta mixture for 2 mins, or until lightly browned. Using a slotted spoon, transfer puffs to a tray lined with paper towels.
- Drizzle warm puffs with honey syrup and sprinkle with pistachios. Garnish with orange zest. Serve.
