Chorizo And Vegetable Quiche
- 1/2 cup packaged dried breadcrumbs
- 2 tbsp butter, melted
- 2 None chorizo sausages, finely chopped
- 1 None small brown onion, finely chopped
- 1/2 lb broccoli, cut into small florets
- 1 None small red chile, coarsely chopped
- 4 large eggs, at room temperature
- 1 1/4 cups cream
- 1/4 cup grated aged chedder cheese
- None None Mixed greens, to serve
- Preheat oven to 400u0b0F. Grease a 9-inch tart pan.
- Combine breadcrumbs with butter in a small bowl. Scatter mixture over base of prepared pan.
- Heat a lightly oiled medium skillet over moderately high heat. Add chorizo and onion; saute for 2-3 minutes or until chorizo is crisp. Add vegetables; saute for 2-3 minutes or until just tender. Spoon mixture over breadcrumbs in pan.
- Whisk together eggs and cream in a medium bowl; gently pour over vegetables in dish. Sprinkle with cheese. Bake for 20-25 minutes or until set. Remove from oven; cool for 5 minutes. Serve with salad.
