Deluxe Chocolate Wedding Cupcakes
- 2 1/4 cups butter, coarsely chopped
- 10.5 oz dark chocolate, coarsely chopped
- 4 1/2 cups sugar
- 2/3 cup coffee liqueur
- 3 tbsp instant coffee granules
- 3 1/4 cups all-purpose flour, sifted
- 1 cup self-rising flour, sifted
- 3/4 cup cocoa powder
- 3 None large eggs
- None None Dark Chocolate Ganache
- 1 cup heavy cream
- 8 oz dark chocolate, coarsely chopped
- Preheat oven to 375u0b0F. Line 2 - 12-cup muffin pans with paper liners.
- In a large saucepan, combine butter, chocolate, sugar, liqueur, coffee granules and 2 cups water. Stir over low heat until smooth. Transfer to a large bowl and let cool for 15 mins. Whisk in flour and cocoa powder then eggs. Distribute 1/4 cup mixture into each muffin recess and bake for 40 mins. Transfer to wire racks to cool. Repeat with remaining batter.
- Meanwhile, for the dark chocolate ganache, bring cream to a boil. Pour over chocolate in a large bowl and stir until smooth. Cover bowl and chill for 30 mins, or until spreadable.
- Frost cupcakes with ganache and arrange on a tiered cake stand. Decorate as desired.
