Indian Zucchini And Carrot Fritters (Bhaji)
- 1 cup besan (chickpea) flour
- 2 tsp kosher salt
- 1 tsp garam masala
- 1/2-1 tsp cayenne pepper
- 1/4 tsp ground turmeric
- 2 cloves garlic, crushed
- 2 None onions, thinly sliced
- 1 None carrot, coarsely grated
- 1 None zucchini, coarsely grated
- 1/2 cup loosely packed fresh cilantro leaves
- None None Vegetable oil, for deep-frying
- 1 cup mango chutney
- Whisk besan, salt and 1/2 cup cold water in large bowl until mixture forms a smooth thick batter. Stir in spices, garlic, onion, carrot, zucchini and cilantro; season.
- Heat oil in wok on medium-high heat. Deep-fry tablespoons of mixture, in batches, until vegetables are tender and fritters are lightly browned. Drain on paper towels.
- Serve fritters with chutney.
