Tuna And Macaroni Mornay

  1. Cook macaroni in boiling salted water according to package directions. Drain. Add asparagus 2 mins before end of cooking time. Drain and return to pan.
  2. Meanwhile, melt butter in a medium saucepan on medium heat. Add flour and cook, stirring, for 2 mins, until mixture just starts to brown.
  3. Gradually pour in milk, stirring constantly, until smooth and combined. Cook sauce, stirring, until sauce boils and thickens. Stir in 1/2 cup of the cheese. Add nutmeg and season to taste.
  4. Preheat the broiler. Add cheese sauce and tuna to macaroni mixture and stir to combine. Pour into a baking dish and sprinkle with remaining 1/2 cup cheese. Broil for 5-10 mins, until cheese is melted and golden. Serve with salad.
