Tuna And Macaroni Mornay
- 9 oz elbow macaroni
- 1 bunch asparagus, trimmed and cut into 3/4-inch pieces
- 4 tbsp (1/2 stick) butter
- 1/4 cup flour
- 2 2/3 cups milk
- 1 cup grated Cheddar cheese
- None None Pinch of grated nutmeg
- 3 cans (5 oz each) tuna in water, drained and flaked
- None None Salad greens, to serve
- Cook macaroni in boiling salted water according to package directions. Drain. Add asparagus 2 mins before end of cooking time. Drain and return to pan.
- Meanwhile, melt butter in a medium saucepan on medium heat. Add flour and cook, stirring, for 2 mins, until mixture just starts to brown.
- Gradually pour in milk, stirring constantly, until smooth and combined. Cook sauce, stirring, until sauce boils and thickens. Stir in 1/2 cup of the cheese. Add nutmeg and season to taste.
- Preheat the broiler. Add cheese sauce and tuna to macaroni mixture and stir to combine. Pour into a baking dish and sprinkle with remaining 1/2 cup cheese. Broil for 5-10 mins, until cheese is melted and golden. Serve with salad.
