Creamy Apple Cinnamon Pie
- 1/2 cup all-purpose flour
- 1/2 tsp baking soda
- 1/2 cup butter, chopped
- 1/4 cup granulated sugar
- 1 None egg yolk
- 1/2 None lemon, juiced
- None None Filling
- 5 None Granny Smith apples, peeled, cored, chopped
- 2 tbsp granulated sugar
- 1 tbsp lemon juice
- 1 tsp ground cinnamon
- None None Topping
- 1 1/4 cups sour cream
- 1 None egg yolk
- 2 tbsp brown sugar
- 1 None lemon, zested
- 1 tbsp cinnamon sugar
- None None whipped cream, to serve
- Preheat oven to 350u0b0F. Lightly grease an 8 inch springform pan.
- Sift flour and baking soda together into a large bowl. Cut in butter until mixture resembles fine breadcrumbs. Mix in sugar, egg yolk and enough lemon juice to make a pliable dough. Press into base and sides of prepared pan. Chill.
- Meanwhile, to make the filling, bring apples, sugar, lemon juice and cinnamon to a boil. Cook, stirring, for 10-15 mins, until softened. Mash roughly then let cool. Spread over prepared pie shell.
- To make the topping, whisk together sour cream, egg yolk, brown sugar and lemon zest. Spread over apple mixture then sprinkle with cinnamon sugar.
- Bake for 35-40 mins, until pastry is golden and topping is set. Let cool in pan for 10 mins. Serve warm or cold, sliced, with whipped cream.
