Salmon Steaks With Fennel Salad
- 2 tbsp red wine vinegar
- 1 tbsp olive oil
- 2 tsp sugar
- 2 tsp Dijon mustard
- 4 (7 oz) salmon steaks
- 1 tbsp finely chopped fresh chives
- 1 tbsp finely chopped fresh dill
- 7 oz baby spinach
- 2 None medium apples, thinly sliced
- 2 baby bulbs fennel, trimmed, thinly sliced
- 1 None small cucumber, seeded, thinly sliced
- 1/4 cup coarsely chopped fresh chives
- 1 1/2 tbsp coarsely chopped fresh dill
- Whisk together vinegar, oil, sugar and mustard until emulsified. Set aside.
- Coat fish with 1 tbsp dressing, chives and dill in a medium bowl. Cook in a heated, lightly oiled frying pan until cooked to your liking.
- Meanwhile, combine remaining ingredients in a large bowl with remaining dressing and toss gently to combine. Serve fish with salad.
