Roast Salmon With Pine Nut Crumb
- 2 cups sourdough breadcrumbs
- 3 tbsp butter, chopped
- 1/2 cup plus 1 tbsp pine nuts
- 2 cloves garlic, coarsely chopped
- 1 tbsp lemon thyme leaves
- 2 None lemons, cut into wedges
- 1 None red onion, thickly sliced
- 6 None salmon fillets
- 2 tbsp olive oil
- None None FOR THE SALAD
- 1 cup frozen fava beans
- 1 cup frozen peas
- 1 cup pea shoots
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Preheat the oven to 400u0b0F. Line baking pan with parchment paper.
- Combine crumbs, butter, 1/2 cup pine nuts, garlic and thyme in a food processor. Pulse until it begins to bind together.
- Arrange lemon wedges and onion slices on prepared pan. Place salmon on top. Press crumb mixture on salmon. Drizzle with olive oil.
- Bake 12-15 mins, until fish is just cooked through.
- For the salad, blanch fava beans and peas in boiling salted water 1 min. Drain and refresh in iced water. Drain well. Transfer to a bowl with pea shoots. Toss with combined oil and lemon juice. Season to taste. Serve salmon with baked onions, lemon wedges and salad. Sprinkle with additional pine nuts.
