Prawns In Tangy Chili Sauce
- 4 None large green onions, trimmed
- 2 tbsp vegetable oil
- 1 None garlic clove, peeled and crushed
- 1 None red chili pepper, deseeded and sliced
- 6 None raw jumbo prawns, peeled but with tails left on
- 1 tsp lime juice
- 2 tbsp light soy sauce
- 1 cup fish stock
- 1 tsp rice flour
- 1/2 cup sweet and sour sauce
- None None lime slices and fresh cilantro to garnish
- Blanch the whole green onions in a pan of boiling water for a few mins until just soft. Drain and set aside. Heat the oil in a deep frying pan and saute the garlic and chili for 2-3 mins. Add the prawns and saute over a high heat for about 3 mins until just pink. Stir in the lime juice and soy sauce.
- Blend 3 tbsp of the fish stock with the rice flour until smooth then stir in the rest of the fish stock. Pour into the frying pan and bring to a boil. Stir in the sweet and sour sauce and simmer for 2-3 mins. Add the green onions and simmer for a few more mins until heated through. Serve garnished with the lime slices and cilantro.
