Mushrooms With Garlic Phyllo Puffs
- 3 cloves garlic, finely chopped
- 250 ml cream
- 1 tbsp butter
- 2-3 tbsp olive oil
- 6 stems parsley, chopped
- 10 sheets filo pastry, about 30 cm square
- 250 g small mushrooms, sliced
- 50 g spinach
- Place the garlic and cream in a small pan and simmer for 20 minutes, until cream has reduced by half. Season with salt and pepper and allow to cool, stirring occasionally.
- Preheat oven to 350u0b0F. Melt the butter and puree with 1 tbsp olive oil and parsley. Cut pastry into 3 inch squares, brush each square with parsley butter, place 2 squares on top of each other and place on a parchment lined baking tray. Bake for about 8 minutes until golden brown.
- For the mushrooms, heat 1-2 tbsp oil in a large frying pan and saute the mushrooms for 3-4 minutes. Season with salt and pepper and set aside. Add the mushrooms and the spinach to the cream, mix well then sandwich between 2 squares of pastry. Serve immediately.
