Baked Spicy Cod
- 1 lb small potatoes, peeled, thinly sliced
- 1 None onion, thinly sliced
- 1 clove garlic, minced
- 1 None red pepper, deseeded, thinly sliced
- 1 None small fresh red chili, finely chopped
- 1 tbsp fresh oregano leaves, finely chopped, plus extra for garnish
- 1 (13.5 oz) can chopped tomatoes
- 4 None cod fillets
- Preheat oven to 425u0b0F. Place potatoes in a microwave-safe dish. Cover and cook on HIGH (100%) for 8-10 mins, until tender. Drain.
- Meanwhile, lightly coat a frying pan with oil. Saute onion and garlic over medium heat for 2 mins. Add pepper and cook for 1 min. Add chili, oregano and tomatoes. Bring to a boil then reduce heat and simmer for 5 mins. Transfer to a baking dish and top with potatoes and fish, pushing lightly into sauce. Bake for 10 mins. Serve garnished with oregano.
