Baked Spicy Cod

  1. Preheat oven to 425u0b0F. Place potatoes in a microwave-safe dish. Cover and cook on HIGH (100%) for 8-10 mins, until tender. Drain.
  2. Meanwhile, lightly coat a frying pan with oil. Saute onion and garlic over medium heat for 2 mins. Add pepper and cook for 1 min. Add chili, oregano and tomatoes. Bring to a boil then reduce heat and simmer for 5 mins. Transfer to a baking dish and top with potatoes and fish, pushing lightly into sauce. Bake for 10 mins. Serve garnished with oregano.
