Spice Crusted Lamb Racks With Baked Potato Wedges
- 2 1/4 lb potatoes, cut into wedges
- 1/4 cup olive oil
- 4 (4-chop) lamb racks
- 1/2 tsp dried chili flakes
- 2 tbsp nigella seeds (black cumin), if available
- 2 tbsp sesame seeds
- 1 clove garlic, minced
- 1/3 cup fresh flat-leaf parsley leaves
- None None lemon wedges, to serve
- Preheat oven to 400u0b0F. Toss potatoes and 2 tbsp oil together on a baking tray. Roast for 55 mins, or until crispy and lightly browned.
- Meanwhile, arrange lamb in a roasting pan. Combine remaining oil, spices and garlic then rub over lamb to coat. Roast for last 20 mins of potato cooking time, or until browned and cooked to your liking.
- Place potatoes and parsley in a large serving bowl and toss gently to combine. Serve lamb with potatoes and lemon wedges.
