Chocolate Flourless Torte

  1. Preheat the oven to 325u0b0F. Lightly grease and flour a 9-inch springform pan.
  2. Place the chocolate, butter and cinnamon in a medium heatproof bowl. Place over saucepan of gently simmering water. Do not allow water to touch bottom of bowl. Stir until melted and smooth. Set aside.
  3. Beat egg yolks and 1/4 cup of the sugar in a large bowl with an electric mixer until thick and pale. Fold in the chocolate mixture.
  4. Beat the egg whites in a separate, clean, large bowl with electric mixer until soft peaks form. Gradually add the remaining 3/4 cup sugar, beating until thick and glossy. Gently fold into the chocolate mixture. Pour into prepared pan.
  5. Bake for 55-60 mins or until a toothpick inserted into the center comes out clean. Loosen cake from the pan using a spatula. Cool for 5-10 mins to allow the cake to shrink away from the pan. Remove from pan; cool completely on a wire rack.
  6. Sprinkle with cocoa powder and serve with whipped cream and berries.
