Chocolate Flourless Torte
- 9 oz good-quality dark chocolate, coarsely chopped
- 14 tbsp (1 3/4 sticks) butter, chopped
- 1 tsp ground cinnamon
- 4 None eggs, separated
- 1 cup sugar
- 1/4 cup unsweetened cocoa powder
- None None Whipped cream, to serve
- None None Berries, to serve
- Preheat the oven to 325u0b0F. Lightly grease and flour a 9-inch springform pan.
- Place the chocolate, butter and cinnamon in a medium heatproof bowl. Place over saucepan of gently simmering water. Do not allow water to touch bottom of bowl. Stir until melted and smooth. Set aside.
- Beat egg yolks and 1/4 cup of the sugar in a large bowl with an electric mixer until thick and pale. Fold in the chocolate mixture.
- Beat the egg whites in a separate, clean, large bowl with electric mixer until soft peaks form. Gradually add the remaining 3/4 cup sugar, beating until thick and glossy. Gently fold into the chocolate mixture. Pour into prepared pan.
- Bake for 55-60 mins or until a toothpick inserted into the center comes out clean. Loosen cake from the pan using a spatula. Cool for 5-10 mins to allow the cake to shrink away from the pan. Remove from pan; cool completely on a wire rack.
- Sprinkle with cocoa powder and serve with whipped cream and berries.
