Braised Calamari In Tomato Sauce

  1. Heat oil in a large saucepan on medium. Saute onion, garlic and spices, 4-5 minutes, until tender and aromatic.
  2. Add calamari and cook, stirring, 2-3 minutes. Add tomato and pepper, mixing well. Bring to a boil, then reduce heat to low and simmer, covered, 15-20 minutes, until calamari is tender.
  3. Add potato and cook, uncovered, 5-10 minutes. Stir in olives and simmer another 5 minutes.
  4. Meanwhile, cook pasta according to package instructions. Serve braised calamari and pasta sprinkled with parsley.
