Spiced Apple Cake
- 1/2 cup butter
- 3/4 cup light brown sugar
- 2 None eggs, beaten
- 1 2/3 cups all-purpose flour
- 1 tsp pumpkin pie spice
- 1 tsp ground cinnamon
- 2 tsp baking powder
- 1 lb apples, peeled, cored, roughly chopped
- 4 pieces preserved ginger in syrup, drained, roughly chopped
- 4 tbsp ginger syrup
- None None demerara and powdered sugar, to sprinkle
- None None honey and whipped cream sprinkled with cinnamon, to serve
- Preheat oven to 325u0b0F. Lightly grease and line a 7 inch cake pan with greased parchment paper.
- Cream butter and sugar until smooth. Gradually beat in eggs. Sift together flour, spices and baking powder then fold in. Fold in apples, ginger and ginger syrup. Transfer to prepared pan and bake for around 1 hour 45 mins, until a skewer inserted in the center comes out clean. Let cool in pan for 10 mins then transfer to a wire rack to cool completely.
- Once cool, sprinkle with demerara sugar and dust with powdered sugar. Cut into slices. Serve with honey and whipped cream sprinkled with cinnamon.
