Pork And Veal Meatloaf With Spicy Apple Relish
- 2 tsp olive oil
- 1 small onion, finely chopped
- 1 None celery stalk, finely chopped
- 2 cloves garlic, crushed
- 1 None Granny Smith apple, peeled and coarsely grated
- 9 oz ground pork
- 9 oz ground veal
- 1 cup fresh breadcrumbs
- 1 None egg, lightly beaten
- 2 tbsp finely chopped sage
- None None Mashed potatoes, green beans, to serve
- None None FOR THE SPICY APPLE RELISH
- 2 tsp olive oil
- 1 small red onion, finely chopped
- 1 small red chili pepper, finely chopped
- 2 tbsp malt vinegar or cider vinegar
- 2 tbsp packed brown sugar
- 2 None Granny Smith apples, peeled and finely chopped
- 1/4 cup raisins
- Preheat the oven to 350u0b0F. Lightly grease an 8 x 4 inch loaf pan.
- Heat oil in a large skillet on medium heat. Saute onion, celery and garlic 3-4 mins, until tender. Add apple; cook, stirring, 4-5 mins, until most of the liquid has evaporated. Cool.
- Combine ground meats, breadcrumbs, egg, sage and onion mixture in a large bowl; season to taste. Press mixture into prepared pan. Smooth top; cover with foil.
- Bake 25 mins. Drain off excess fat. Bake a further 30-35 mins, until cooked through.
- Meanwhile, for the spicy apple relish, heat oil in a medium saucepan on high heat. Saute onion 2-3 mins, until tender. Add chili pepper; cook 1 min, until fragrant. Add vinegar and sugar; cook, stirring, until sugar dissolves. Add apples and raisins; cook, stirring, 8-10 mins, until apple is soft and tender.
- Serve meatloaf sliced with spicy apple relish, mashed potatoes and green beans.
