Beef Kofta Curry
- 1 tbsp vegetable oil
- 1 None large Spanish onion, sliced
- 2 None dried chilies
- 1 None cinnamon stick
- 6 None cardamom pods
- 1 tsp mustard seeds
- 1 tsp whole cumin seeds
- 1 (13.5 oz) can crushed tomatoes
- 1 tbsp brown sugar
- 1 tbsp olive oil
- None None Kofta
- 1 lb ground beef
- 3/4 inch fresh ginger, peeled, chopped
- 2 cloves garlic, chopped
- 1 bunch fresh cilantro, roots chopped, leaves picked
- 1 tsp garam masala
- None None steamed basmati rice, to serve
- In a large saucepan, heat vegetable oil over medium heat. Cook onion for 4-5 mins, until golden. Add chilies and spices. Cook for 1 min, until fragrant and toasted. Add tomatoes, 1 cup water and brown sugar. Bring to a boil, reduce heat to low and simmer for 4-5 mins.
- Meanwhile, to make the kofta, combine all ingredients in a food processor. Process to combine. Season. Shape into ovals, using around 1 tbsp mixture per kofta.
- In a large frying pan, heat oil over medium heat. Cook kofta for 8-10 mins, until browned on all sides. Serve with curry and steamed rice.
