Breakfast Sausages With Mashed Winter Veggies

  1. Cook the potatoes and celeriac in boiling salted water for 20 mins. Drain and keep warm.
  2. Meanwhile, heat the oil in a frying pan and sear the sausages over medium heat for 8 mins, turning. Remove from the pan and keep warm. Add the red onion and saute for 5 mins, until softened. Season then add the flour. Add the stock and bring to a boil, stirring. Return the sausages to the pan and keep warm.
  3. To finish, bring the milk and butter to a boil. Add to the potatoes and celeriac and mash. Season with salt and a pinch of nutmeg. Add the spring onions. Serve with the sausages and gravy.
