Breakfast Sausages With Mashed Winter Veggies
- 1 lb potatoes, peeled and roughly chopped
- 1 2/3 lb celeriac, or another root vegetable, peeled and diced
- 2 tbsp oil
- 12 None breakfast sausages
- 1 None red onion, peeled and sliced
- 1 tbsp all-purpose flour
- 1 cup vegetable stock
- 2/3 cup 2% or whole milk
- 3 1/2 tbsp butter
- 1 pinch freshly grated nutmeg
- 8 None spring onions, sliced
- Cook the potatoes and celeriac in boiling salted water for 20 mins. Drain and keep warm.
- Meanwhile, heat the oil in a frying pan and sear the sausages over medium heat for 8 mins, turning. Remove from the pan and keep warm. Add the red onion and saute for 5 mins, until softened. Season then add the flour. Add the stock and bring to a boil, stirring. Return the sausages to the pan and keep warm.
- To finish, bring the milk and butter to a boil. Add to the potatoes and celeriac and mash. Season with salt and a pinch of nutmeg. Add the spring onions. Serve with the sausages and gravy.
