Grilled Beef And Bacon Brochettes
- 1 medium red pepper, cut into 1-inch pieces
- 1 medium yellow pepper, cut into 1-inch pieces
- 1 1/3 lbs beef sirloin steak, trimmed and cut into 1-inch pieces
- 6 slices bacon, partially cooked and cut into 1 1/2-inch pieces
- 2 small red onions, cut into wedges
- 2 tbsp balsamic vinegar
- 2 tbsp wholegrain mustard
- None None Flatbread, baby spinach leaves, lemon wedges, to serve
- Thread pepper, beef, bacon and onion onto 12 skewers. Spray with no stick cooking spray. Combine vinegar and mustard in a small bowl. Brush evenly over skewers.
- Preheat a lightly oiled grill to medium heat. Grill skewers, turning, for 10-12 mins for medium or until beef is cooked to desired doneness. Transfer beef to a heatproof plate. Cover with foil; let stand for 5 mins.
- Meanwhile, spray both sides of flatbread with cooking spray. Grill for 1-2 mins each side or until browned.
- Place flatbread on plates. Top with spinach and skewers. Serve with lemon wedges.
