Glazed Pork Cutlets With Celeriac Salad
- 2 tsp honey
- 1 tsp Dijon mustard
- 1 tbsp olive oil
- 4 None pork cutlets
- 14 oz baby carrots, trimmed
- None None For the Celeriac Salad
- 1 1/4 lbs celeriac, grated
- 1/2 cup mayonnaise
- 1 clove garlic, crushed
- 1/3 cup sour cream
- 2 tbsp lemon juice
- 2 tbsp fresh flat-leaf parsley, roughly chopped
- 2 tsp Dijon mustard
- Preheat the grill to high. In a large bowl, whisk honey, mustard and oil and add pork, toss to coat. Grill for 5 mins each side, or until cooked as desired. Cover and rest for 5 mins.
- Meanwhile, boil, steam or microwave carrots until just tender then drain. Cover to keep warm.
- Meanwhile, to make salad, combine ingredients in a medium bowl and toss gently to combine.
- Serve pork with carrots and salad.
