Coffee Ripple Muffins
- 1 (18 oz) box muffin mix
- 1 None orange, zested and juiced
- 1 None large egg, lightly beaten
- 3 tbsp instant coffee, dissolved in 1 tbsp boiling water
- 1 cup powdered sugar
- 2 tbsp softened butter
- Preheat oven 350u0b0F. Grease and flour a 12-cup muffin pan.
- Combine muffin mix and orange zest in a large bowl. Make a well in the center. Stir in egg and 1 cup cold water until combined. Transfer 3/4 cup muffin batter to a separate bowl and mix in cold coffee. Distribute orange batter between muffin recesses then top with coffee batter. Lightly swirl together to create a rippled effect. Bake for 20-25 mins, or until muffins spring back when lightly touched in the center. Let cool in pan for 5 mins then transfer to a wire rack to cool completely.
- Meanwhile, to make the icing, sift powdered sugar into a bowl. Stir in butter and enough orange juice (around 2 tsp) to make a thick, smooth icing. Spoon over muffins.
