Decadent Chocolate Cake
- 1 pkg. chocolate cake mix with pudding
- 1 (12 oz.) pkg. semi-sweet chocolate chips, divided
- 1 jar apricot preserves
- 1/2 c. apricot brandy
- 3/4 c. sour cream
- 1 can mandarin orange sections
- Prepare cake mix according to directions, stirring in 1 cup chocolate chips.
- Pour batter into 2 greased and floured cake pans.
- Bake at 350u0b0 for 30 minutes or until tests done.
- Cool in pan 10 minutes; remove and let cool completely.
- Brush brandy over layers.
- Allow to stand until brandy is absorbed.
- Spread preserves in between layers.
- Place remaining chips in top of double boiler.
- Bring water to boil.
- Reduce heat to low; cook until chocolate melts completely.
- Remove from heat; stir in sour cream, blending well.
- Spread on top layer of cake only.
- Garnish top with mandarin orange sections.
