Prawn And Avocado Pasta Salad
- 13.25 oz pasta shells
- 1 1/2 lb cooked prawns, peeled, deveined, halved lengthwise
- 1/2 lb yellow teardrop tomatoes, halved
- 1/4 cup small fresh basil leaves
- 2 1/2 cups baby arugula
- 1 None small red onion, thinly sliced
- 1 None medium avocado, thinly sliced
- None None Dressing
- 1/2 cup avocado oil
- 1/3 cup white wine vinegar
- 2 tsp dijon mustard
- 1 clove garlic, minced
- Cook pasta in boiling salted water for 8 mins, or until just tender. Drain then rinse under cold water. Drain.
- To make dressing, whisk together ingredients until combined.
- In a large serving bowl, combine pasta with remaining ingredients. Drizzle with dressing. Serve.
