Green Beans In Sour Cream
- 2 lb. fresh green beans
- 1 medium onion, chopped
- 2 Tbsp. minced fresh parsley
- 2 Tbsp. butter or margarine, melted
- 1 (8 oz.) carton commercial sour cream
- 1 to 2 tsp. grated lemon rind
- 1 tsp. salt
- 1/4 tsp. freshly ground pepper
- 1 c. buttered soft bread crumbs
- Wash beans and remove strings.
- Cut green beans into 1-inch pieces.
- Cook in a small amount of boiling water for 6 minutes or until tender.
- Drain; transfer beans to a 2-quart casserole.
- Set aside.
- Saute onion and parsley in butter 2 minutes or until onion is tender.
- Stir in sour cream, lemon rind, salt and pepper. Spoon sour cream mixture over beans.
- Sprinkle bread crumbs over sour cream mixture.
- Bake, uncovered, at 350u0b0 for 20 minutes or until thoroughly heated.
- Yield:
- 8 servings.
