Grilled Steaks With Café De Paris Butter And Fries
- None None Cafe de Paris Butter
- 1 cup softened butter
- 2 tsp ketchup
- 2 tsp Dijon mustard
- 2 tsp baby capers, rinsed, drained
- 1/2 None shallot, finely chopped
- 2 tbsp coarsely chopped fresh flat-leaf parsley leaves
- 1 tbsp finely chopped fresh chives
- 1 tsp finely chopped fresh marjoram leaves
- 1 clove garlic, minced
- 2 None drained anchovy fillets
- 2 tsp brandy
- 2 tsp madeira
- 1/2 tsp Worcestershire sauce
- 1/4 tsp sweet paprika
- 2 tsp mild curry powder
- 1/2 tsp lemon zest
- 1/2 tsp orange zest
- 1 tsp sea salt flakes
- None None Grilled Steaks with Cafe de Paris Butter and Fries
- 18 oz frozen shoestring fries
- 6 (8 oz) New York Strip steaks
- 2 tbsp olive oil
- Combine all ingredients for Cafe de Paris butter in a food processor and process until smooth. Shape into 2 logs, roll in plastic wrap then refrigerate (or freeze) until required. Slice 1 log into 6 pieces and let come to room temperature. Freeze remaining log for another use.
- Cook fries according to directions on package.
- Preheat grill. Coat steaks with oil and season. Grill for 3 mins per side, or until cooked to your liking. Transfer to a plate, cover loosely with foil and let rest for 6 mins.
- Top steaks with butter. Serve with fries.
