Baked Pasta With Feta And Squash
- 1 lb winter squash, peeled, chopped
- 3 slices bacon, chopped
- 6 cloves garlic, unpeeled
- 2 tbsp oil
- 14 oz rigatoni pasta
- 3.5 oz feta, crumbled
- 1 tbsp fresh parsley leaves, chopped, plus extra to serve
- 2 oz mozzarella cheese, grated
- Preheat oven to 375u0b0F. Toss together squash, bacon, garlic and 1 tbsp oil. Transfer to a baking tray and roast for 30-40 mins, until squash is tender. Squeeze cooked garlic cloves from skin.
- Meanwhile, cook rigatoni in boiling, salted water until al dente. Drain, reserving 1 cup of cooking liquid. Toss with roast squash mixture, remaining oil, feta and parsley. Transfer to a large baking dish and pour reserved liquid over top. Sprinkle with cheese then bake for 25 mins, until golden. Sprinkle with reserved parsley and serve.
