Chopped Bacon Salad
- 4 slices bacon
- 1/3 cup extra virgin olive oil
- 2 tbsp lemon juice
- 2 tsp dijon mustard
- 1 clove garlic, minced
- 2 heads baby romaine, roughly chopped
- 4 None tomatoes, roughly chopped
- 1 None large cucumber, roughly chopped
- 1 None yellow pepper, deseeded, roughly chopped
- 3 None spring onions, finely sliced
- 2 1/4 cups alfalfa sprouts, roughly chopped
- 7 oz feta cheese, crumbled
- Lightly oil a nonstick frying pan and cook bacon over medium heat for 3-4 mins per side, until crispy. Drain on paper towels then roughly chop. Set aside.
- Whisk together olive oil, lemon juice, dijon mustard and garlic. Toss 1/2 of vinaigrette with remaining ingredients and bacon. Serve.
