Chopped Bacon Salad

  1. Lightly oil a nonstick frying pan and cook bacon over medium heat for 3-4 mins per side, until crispy. Drain on paper towels then roughly chop. Set aside.
  2. Whisk together olive oil, lemon juice, dijon mustard and garlic. Toss 1/2 of vinaigrette with remaining ingredients and bacon. Serve.
