Currant And Herb Glazed Cornish Hens
- 4 (1.75 lb) Cornish hens
- 1 tbsp olive oil
- 1 tbsp chicken seasoning, like McCormick Montreal Chicken
- 3/4 cup red currant preserves
- 2 tsp lemon juice
- 1/2 tsp lemon zest
- 1 tsp chopped fresh sage
- 1 tsp chopped fresh parsley
- 2 cups chicken broth
- Preheat oven to 425u0b0F. Arrange hens on a rack in a large roasting pan. Rub hens with oil then sprinkle with 2 tsp seasoning mix. Roast for 15 mins.
- Meanwhile, combine preserves, lemon juice, lemon zest, herbs and remaining seasoning mix. Reduce oven to 350u0b0F. Brush hens with 1/2 the glaze and roast for 15 mins. Brush hens with remaining glaze and pour broth into roasting pan. Roast for 15 mins, or until a thermometer inserted in the thigh reads 170u0b0F. Let rest for 10 mins before serving.
- Pour pan drippings into a glass measuring cup. Let stand for 5 mins then spoon fat from surface. Serve sauce with hens.
