Oatmeal Raisin Biscuits
- 1 3/4 c. flour
- 1/2 c. quick oats (uncooked)
- 2 Tbsp. sugar
- 1 tsp. baking powder
- 1/2 tsp. soda
- 1/2 tsp. salt
- 1/2 c. golden raisins
- 1/4 c. butter (1/2 stick)
- 3/4 c. buttermilk
- Preheat oven at 425u0b0.
- Combine flour, oats, sugar, baking powder, salt and soda in large bowl.
- Stir in raisins.
- Cut in butter until mixture resembles coarse crumbs.
- Stir in buttermilk just until dough holds together.
- Knead dough on lightly floured surface about 10 times.
- Roll dough to 1/2-inch thickness.
- Cut with 2-inch diameter round cutter.
- Place biscuits 1-inch apart on buttered cookie sheet.
- Bake 12 to 15 minutes or until golden brown.
- Cool slightly.
- Remove from cookie sheet.
- Serve with butter.
