Sliders With Fried Cornichons And Onion Rings
- 1/2 lb ground beef
- 4 strips bacon, finely chopped
- 2 tbsp olive oil
- 1 None onion, thinly sliced
- 2 oz smoked cheddar, grated
- None None Fried onion rings and cornichons
- 1/3 cup flour
- 1 tbsp cornstarch
- 1/4 cup cold soda water
- 1 tbsp vodka
- 1 None large onion, sliced into rings
- 12 None whole cornichons
- None None oil, for deep-frying
- 6 None mini brioche buns, halved
- None None wasabi mayonnaise, to spread
- None None baby spinach leaves
- None None cherry tomatoes, sliced, to serve
- None None cornichons, sliced, plus extra to serve
- For the burgers, combine beef and bacon in a bow and season to taste. Shape into 6 even patties. Cover and chill until needed.
- To cook onions and burgers, heat oil over medium heat. Cook onion 4-5 mins, stirring, until softened. Transfer to a plate. In the same pan, cook brugers 4 mins on one side. Turn over and top evenly with cheese. Cover pan and cook for 4-5 more mins, until cooked through and cheese is melted. Keep warm.
- For the onion rings and fried cornichons heat oil in a large saucepan to 325u0b0F, until a cube of bread sizzles as soon as it is added. In a medium bowl, combine flour and cornstarch. Gradually whisk in combined soda water and vodka, until smooth. Place bowl inside a larger bowl filled with ice to chill it. Dip onion rings into batter and lower into oil, frying 3-4 mins, until golden. Drain on paper towel, season to taste and repeat with the whole cornichons.
- To serve, spread both sides of buns with mayonnaise and layer with spinach, tomato, patties, sliced cornichons and cooked onion. Serve with fried onion rings and cornichons.
