Pineapple Panna Cotta
- 1.5 oz tropical-flavored gelatin powder
- 1 x 8 oz can pineapple chunks in juice, drained
- 1 None passion fruit, pulp scooped out
- 1 1/4 cup heavy cream
- 3/4 cup milk
- 1/3 cup sugar
- 2 tsp unflavored gelatin powder
- 1 tsp vanilla extract
- Lightly oil 4 x 3/4 cup gelatin molds.
- Place flavored gelatin powder in a heatproof bowl. Add 1/3 cup boiling water and stir until dissolved. Stir in 2 tbsp cold water.
- Divide pineapple and passion fruit pulp among molds. Pour gelatin mixture over fruit and place molds on a tray. Chill for 1 hour or until set.
- Combine cream, milk and sugar in a small saucepan over low heat. Sprinkle unflavored gelatin over the surface. Cook and stir for 5 mins or until gelatin has dissolved. Stir in vanilla. Strain mixture into a dish and cover surface with plastic wrap. Chill for 1 hour or until cooled but not set; stir well.
- Pour cream mixture into molds on top of fruit gelatin. Chill for 4 hours or until set. Dip molds briefly into warm water, then turn panna cotta out on to serving plates.
