Fava Bean Pasta Salad
- 2 1/4 lb fresh fava beans, shelled
- 9 oz orzo pasta
- 1 tbsp olive oil
- 3 None spring onions, thinly sliced
- 2 cloves garlic, thinly sliced
- 2/3 cup fresh mint leaves, roughly chopped
- 1/4 cup lemon juice
- 18 oz cherry tomatoes, halved
- 1 tbsp brown sugar
- 3 oz Parmesan cheese, shaved
- Boil, steam or microwave fava beans until just tender. Drain. Rinse under cold water until cool then drain. Peel skin.
- Cook orzo in boiling salted water until al dente. Drain.
- Meanwhile, heat oil in a large frying pan over medium heat. Cook onions and garlic, stirring, until onion softens. Add pasta, fava beans, mint and lemon juice. Stir until combined. Transfer to large serving platter.
- Add tomatoes and sugar to frying pan. Cook, stirring occasionally, for 5 mins, or until tomatoes just soften. Arrange on salad then sprinkle with cheese.
