Sushi Rice Bowl
- 3 cups cooked short-grain brown rice
- 1 None avocado, seeded, peeled and sliced
- 1 None carrot, shredded
- 2 None sticks celery, thinly sliced
- 4 oz smoked salmon slices
- 2 None green onions, finely shredded
- 1 tbsp pickled ginger slices
- 1/2 None nori sheet, cut into thin strips using scissors
- None None FOR THE DRESSING
- 1/4 cup teriyaki sauce
- 1/4 cup rice vinegar
- 1/4 cup mirin sauce
- 1/2 tsp grated lemon peel
- 1 tsp caster sugar
- Divide rice among 4 bowls.
- For the dressing, whisk all ingredients in a medium bowl. Season to taste.
- Drizzle half the dressing over rice in bowls. Top each evenly with remaining ingredients. Drizzle with remaining dressing.
