Caramel Chocolate Chip Fruit And Nut Buns

  1. Whisk yeast, milk and 2 tsp of the brown sugar in a large bowl until yeast dissolves. Whisk in 1 cup of the flour. Cover; let stand in a warm place about 30 mins or until frothy.
  2. Stir butter, egg, remaining brown sugar, remaining 2 1/2 cups flour, salt and spice into yeast mixture. Stir in raisins, choc chips and nuts. Knead dough on a floured surface about 5 mins or until smooth and elastic. Place dough in an oiled large bowl. Cover; let stand in a warm place about 1 1/2 hours or until dough has doubled in size.
  3. Punch down dough; knead on a floured surface until smooth. Divide dough into 12 portions. Shape each portion into 6-inch long buns. Place on an oiled baking pan. Cover; let stand in a warm place about 30 mins or until doubled in size.
  4. Preheat the oven to 400u0b0F.
  5. Brush buns with egg yolk. Bake about 30 mins or until buns sound hollow when tapped. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
  6. Meanwhile, for the caramel icing, mix powdered sugar, brown sugar and 2 tsp boiling water in a small bowl until smooth.
  7. Drizzle icing over cooled buns. Let stand until icing is set.
