Vegetable Quiche
- 1 medium size zucchini, cut in chunks (unpeeled)
- 1 each: medium size carrot, onion, green pepper, celery and radish (if desired)
- 1 (8 oz.) pkg. Philadelphia cream cheese
- 2 eggs
- 1 1/2 c. milk
- 3/4 c. Bisquick
- 1 Tbsp. margarine
- Pour the creamed mixture into a large bowl and add the drained vegetables.
- Mix lightly and add 3/4 teaspoon Italian seasoning or other if preferred.
- Gently toss in 1 cup grated Cheddar cheese. Batter should be consistency of a cake batter.
- If too thin, add more Bisquick before folding in the grated cheese.
- Other cheeses may be used if desired.
- Pour batter into a large well-greased baking dish.
- Sprinkle with paprika and parsley flakes.
- Bake at 350u0b0 for about 35 to 40 minutes.
- This freezes very good.
