Banana Chocolate Cake
- 500 g dark chocolate
- 5 g coconut oil
- 750 g whipping cream
- 3 None medium eggs
- 100 g sugar
- 1/2 tsp vanilla extract
- 60 g plain flour
- 25 g cocoa powder + for 2 tbsp for dusting
- 50 g cornflour
- 1/2 tsp baking powder
- 400 g ripe bananas, sliced into rings
- To make the chocolate decor, melt 1 oz chocolate with the coconut oil in a heatproof bowl over a pan of hot water. Spread the warm chocolate onto a flat surface, such as a non-stick baking tray, and refrigerate until the chocolate is set. Next, use a scraper or chocolate curler to make decorative chocolate rolls and curls, then refrigerate.
- To make the filling, bring the cream to a boil in a pan, then add the remaining chocolate. Chill for 2 hours.
- Preheat the oven to 325u0b0F. Grease the bottom of a 10 inch springform cake pan. Whisk the eggs with 3 tbsp of cold water, then add the sugar and vanilla extract. Sift the flour, 1/4 cup cocoa, cornstarch and baking powder together and fold into the mixture. Pour the mixture into the cake pan and bake for about 20 mins. Remove from the oven and allow to cool, then cut the cake in half horizontally with a long, sharp knife.
- To finish, beat the chilled chocolate filling, then spread 1/4 of the mixture onto the bottom half of the cake. Arrange the banana slices evenly on top of the chocolate filling, then cover with another 1/4 of the chocolate filling. Place the top half of the cake on top and cover with the remainder of the chocolate filling. To serve, dust with cocoa powder and decorate with the chocolate curls.
