Lemon Whipped Yogurt Parfaits With Shortbread

  1. For the whipped yogurt parfaits, combine lemon zest, lemon juice, heavy cream, yogurt and powdered sugar. Whisk to soft peaks then distribute between 6 small serving glasses. Decorate with extra lemon zest. Chill until ready to serve.
  2. For the shortbread, cream butter and sugar until pale and fluffy. Add flour and a pinch of salt. Mix until combined. Gently knead for 1-2 mins then roll into a 2 inch wide log, wrap in plastic wrap and chill for 15 mins.
  3. Preheat oven to 375u0b0F. Grease a baking tray. Cut dough into 1/4 inch thick slices. Place on baking tray. Lightly prick shortbread with a fork. Bake for 12-15 mins, until pale golden. Sprinkle with sugar and let cool. Serve with whipped yogurt.
