Lemon Whipped Yogurt Parfaits With Shortbread
- None None WHIPPED YOGURT PARFAITS
- 1 None lemon, zested and juiced, plus extra lemon zest to decorate
- 1 1/4 cups heavy cream
- 3/4 cup Greek yogurt
- 2 tbsp powdered sugar
- None None SHORTBREAD
- 1/2 cup butter
- 1/4 cup granulated sugar, plus extra to sprinkle
- 3/4 cup all-purpose flour, sifted
- 1/3 cup rice flour, sifted
- For the whipped yogurt parfaits, combine lemon zest, lemon juice, heavy cream, yogurt and powdered sugar. Whisk to soft peaks then distribute between 6 small serving glasses. Decorate with extra lemon zest. Chill until ready to serve.
- For the shortbread, cream butter and sugar until pale and fluffy. Add flour and a pinch of salt. Mix until combined. Gently knead for 1-2 mins then roll into a 2 inch wide log, wrap in plastic wrap and chill for 15 mins.
- Preheat oven to 375u0b0F. Grease a baking tray. Cut dough into 1/4 inch thick slices. Place on baking tray. Lightly prick shortbread with a fork. Bake for 12-15 mins, until pale golden. Sprinkle with sugar and let cool. Serve with whipped yogurt.
