Drumsticks With Rice And Vegetables
- 1 cup Greek yogurt
- 1 tsp salt
- 1 tsp white pepper
- 1/2 tsp chinese five spice powder
- 2 lbs chicken drumsticks
- 3/4 cup long-grain white rice
- 5 cups baby spinach leaves
- 1 None carrot, peeled and cut into ribbons
- 1 None zucchini, cut into ribbons
- 1 None small red onion, peeled and very thinly sliced
- Preheat the oven to 400u0b0F. Line a baking tray with baking paper. Mix the yogurt, salt, pepper and five spice powder in a large bowl, then remove half the mixture and set aside. Add the chicken to one half of the yogurt mixture in a large bowl and toss to coat. Place chicken in single layer on the prepared tray and bake for 30 mins or until cooked.
- Meanwhile, cook the rice in a large saucepan of boiling water for 10 mins or until tender. Drain.
- Combine the spinach, carrot, zucchini and onion in a bowl. Spoon the rice and salad onto a serving platter and arrange the chicken on top. Serve drizzled with the remaining yogurt mixture.
