Avocado, Grilled Corn And Black Bean Salad

  1. Preheat grill. In a large bowl, combine dressing, 1 tbsp lime juice, 1 tsp lime zest, garlic and cayenne.
  2. Coat corn with cooking spray and season. Grill for 1 min per side, or until lightly charred. Let cool then cut corn off cobs.
  3. Toss corn, beans, avocados, pepper, onion and cilantro with dressing. Season. Serve in a lettuce-lined serving bowl.
