Herb Baked Fish And Rice
- 1 1/2 c. hot chicken bouillon
- 1/2 c. uncooked regular rice
- 1/4 tsp. Italian seasoning
- 1/4 tsp. garlic powder
- 1 (10 oz.) pkg. chopped broccoli, thawed and drained
- 1 (2.8 oz.) can French fried onions
- 1 Tbsp. Parmesan cheese
- 1 lb. unbreaded fish fillets
- 1/2 c. (2 oz.) shredded Cheddar cheese
- paprika (optional)
- Preheat oven to 375u0b0.
- In 8 x 12-inch baking dish, combine hot bouillon, uncooked rice and seasonings.
- Bake, uncovered, for 10 minutes.
- Top with broccoli, 1/2 can onions and Parmesan cheese. Place fillets diagonally down center of dish; sprinkle lightly with paprika.
- Bake uncovered for 20 to 25 minutes (until fish flakes) and rice is done.
- Top with Cheddar cheese and remaining onions.
- Cook additional 3 to 5 minutes.
