Spicy Lamb Meatballs In Tomato Sauce

  1. Preheat the oven to 350u0b0F. Line a baking sheet with parchment.
  2. In a large bowl, combine the lamb, breadcrumbs, onion, cilantro, garlic, chili, cumin and zest. Mix well and season to taste, then roll tablespoons of the mixture into balls.
  3. Place the meatballs on the baking sheet and spray with oil. Bake for 12-15 mins, until cooked through.
  4. Meanwhile, make the sauce. Heat the oil over a medium heat in a large skillet. Saute the onion and garlic for 2-3 mins, until the onion is tender, then stir in all the remaining ingredients. Simmer for 4-5 mins, until thickened slightly.
  5. Add the meatballs to the sauce. Simmer for 2-3 mins more, stirring gently, to heat through. Serve with couscous and beans.
