Lamb With Cucumber Salad
- 8 None large lamb loin chops
- 2 tsp lemon zest, finely grated
- 2 None store-bought garlic baguettes
- 4 None medium tomatoes, finely chopped
- 1 None small onion, finely chopped
- 1 None small cucumber, finely chopped
- 1.5 oz pitted kalamata olives, finely chopped
- 2 tbsp lemon juice
- 2 tbsp flat-leaf parsley, finely chopped
- None None Mixed greens, to serve
- Preheat the oven to 350u0b0F. Sprinkle both sides of lamb with lemon zest and season to taste. Place on a baking sheet. Wrap garlic bread in foil. Bake both for 10 mins, or until lamb is cooked to desired doneness and bread is heated.
- Meanwhile, combine tomatoes, onion, cucumber, olives, lemon juice and parsley in a medium bowl. Season.
- Serve lamb with cucumber salad, bread and mixed greens.
