Apple Trifle
- 3/4 cup sugar
- 3/4 cup apple juice
- 6 None Granny Smith apples, peeled, cored and chopped
- 1 cup chilled heavy cream
- 1 tsp vanilla extract
- 1 1/2 cups creme fraiche or sour cream
- 1/3 cup whisky
- 1 pkg round vanilla wafer cookies (10-11 oz), broken into pieces
- In a heavy saucepan, heat 1/2 cup sugar over medium-low heat until melted and golden, gently shaking the pan occasionally. Reduce heat to low and carefully add 1/2 cup apple juice; stir until smooth. Add the apples and simmer for 5-10 mins, until the apples are just softened. Remove from the heat and cool.
- In a large bowl, using an electric mixer, beat the cream, remaining 1/4 cup sugar and the vanilla until soft peaks form. Fold in the creme fraiche and set aside. In a large, shallow bowl, mix the whisky and remaining 1/4 cup apple juice. Add the cookies and let soak for 1 min.
- Layer the cookies, apple mixture and whipped cream mixture in eight glass serving dishes. Chill for at least 2 hours before serving.
