Chickpea And Chorizo Salad

  1. Preheat oven to 350u0b0F. Arrange bread on a baking tray and drizzle with 1 tbsp oil. Season to taste. Bake for 5-10 mins, until crunchy and golden. Set aside.
  2. Heat remaining oil in a large frying pan over medium heat. Fry chorizo for 8-10 mins, turning, until browned. Slice thinly. Return to pan along with onion and tomatoes. Cook for 1-2 mins, until slightly softened. Add chickpeas, tossing to warm through. Transfer to a bowl and toss with salad greens, celery, parsley and croutons. Drizzle with balsamic glaze.
  3. Serve immediately.
