Chickpea And Chorizo Salad
- 1/2 loaf stale bread, torn into pieces
- 1 1/2 tbsp olive oil
- 2 None raw chorizo sausages
- 1 None red onion, thinly sliced
- 9 oz cherry tomatoes, halved
- 1 (13.5 oz) can chickpeas, drained, rinsed
- 3.5 oz mixed greens
- 2 stalks celery, sliced
- 2/3 cup fresh flat-leaf parsley leaves, chopped
- 2 tbsp balsamic glaze
- Preheat oven to 350u0b0F. Arrange bread on a baking tray and drizzle with 1 tbsp oil. Season to taste. Bake for 5-10 mins, until crunchy and golden. Set aside.
- Heat remaining oil in a large frying pan over medium heat. Fry chorizo for 8-10 mins, turning, until browned. Slice thinly. Return to pan along with onion and tomatoes. Cook for 1-2 mins, until slightly softened. Add chickpeas, tossing to warm through. Transfer to a bowl and toss with salad greens, celery, parsley and croutons. Drizzle with balsamic glaze.
- Serve immediately.
